Roasted Red Pepper & Basil

  1. 1 box Near East Roasted Red Pepper and Basil quinoa
  2. 1 cup canned black beans
  3. 1 cup cooked shredded or diced Rotisserie chicken breast
Topping Options:
  • Diced avocado
  • Salsa/diced tomatoes
  • Chopped cilantro
  • Shredded cheese
  • Sour cream
  • Lime juice
Preparation Instructions
  1. Prepare quinoa according to instructions on box.
  2. When it is done, stir in black beans and chicken.
  3. Portion into bowls, and add toppings of choice.
