Caprese Quinoa Salad
Rosemary & Olive Oil
  1. 1 box Near East Rosemary and Olive Oil Quinoa Blend
  2. 1/2 cup cherry tomatoes, cut in half
  3. 1 cup fresh spinach, roughly chopped
  4. 2 tablespoons fresh basil, chopped or 1 teaspoon dried
  5. 1/2 cup fresh mozzarella, cubed
  6. olive oil, black pepper
Preparation Instructions
  1. Prepare quinoa according to instructions on box. Let cool to slightly above room temp.
  2. Mix in tomatoes, spinach, basil, and mozzarella. Drizzle olive oil and sprinkle with black pepper before serving.
