Peanut Sauce Chicken Rice Pilaf

  1. 1 package (6.3 oz.) NEAR EAST® Garlic & Herb Pilaf Mix
  2. 1 cup frozen peas
  3. 2 tablespoons peanut butter
  4. 2 tablespoons grape jam or jelly
  5. 1 tablespoon water
  6. 1-1/2 teaspoons soy sauce
  7. 1-1/2 teaspoons lemon juice
  8. 1/8 teaspoon ground ginger
  9. 2 cups chicken breast, cut into 1/2 inch pieces, cooked
  10. 3 tablespoons green onions, sliced
Preparation Instructions
  1. Prepare Near East rice according to package directions except add olive oil instead of butter and add frozen peas with contents of spice sack.
  2. Meanwhile, in large skillet, heat peanut butter, grape jam, water, soy sauce, lemon juice and ginger over low heat. Cook 30 seconds or until melted. Stirring constantly. Stir in cooked chicken and green onions.
  3. Serve peanut/chicken sauce over pilaf mixture.
