Old World Pilaf

  1. 1 box Near East Original Rice Pilaf
  2. 2 carrots, finely chopped
  3. 1/2 cup onion, finely chopped
  4. 1/2 cup raisins
  5. 2 tbsp pine nuts
  6. 1 cup diced cooked rotisserie chicken (optional)
  7. 1 tbsp olive oil
Preparation Instructions
  1. Heat olive oil in a large saucepan over medium-high heat.
  2. Add carrots and onion; saute until vegetables begin to soften.
  3. Add rice and contents of seasoning pouch, stir well. Cook according to directions on Near East box.
  4. Once pilaf is done, stir in chicken (if using), raisins, and pine nuts.
