Northern Bean Brown Rice Pilaf
Brown Rice Pilaf
  1. 1 package (6.25 oz.) NEAR EAST® Brown Rice Pilaf Mix
  2. 1 tablespoon olive oil
  3. 1/4 cup green onions, sliced
  4. 1 cup Northern or butter beans, canned, drained
  5. 1/2 cup carrots, diced, cooked
  6. 1 medium tomato, chopped, drained
  7. 1/4 cup black olives, sliced
  8. 1 tablespoon red wine vinegar
  9. 1 tablespoon fresh or 1 teaspoon dried basil
Preparation Instructions
  1. Prepare Near East rice according to package directions.
  2. Meanwhile, in large skillet, heat oil over medium heat. Cook green onions, beans, carrots, tomatoes and black olives. Cook for 5 to 8 minutes or until tender.
  3. Stir cooked vegetable/bean mixture, vinegar and basil into cooked Near East rice.
