Chicken With Apple Walnut Pilaf

  1. 1 package (6.3 ounces) NEAR EAST® Mediterranean Chicken Flavor Pilaf with Wild Rice Mix
  2. 1/3 cup raisins
  3. 1 tablespoon olive oil
  4. 12 ounces boneless, skinless chicken breast halves (about 3), cut into 1-inch pieces
  5. 3 tablespoons honey
  6. 2 tablespoons lemon juice
  7. 1/4 teaspoon cinnamon or ground cloves
  8. 2 cups chopped red apples
  9. 1/4 cup chopped toasted walnuts
  10. 2 tablespoons chopped fresh parsley (optional)
Preparation Instructions
  1. Prepare rice pilaf mix according to package directions, except stir in raisins when adding rice to boiling water.
  2. Meanwhile, in large skillet, heat oil over medium-high heat. Add chicken; cook 3 minutes. Add honey, lemon juice and cinnamon; cook about 3 more minutes, stirring frequently, or until chicken is no longer pink inside.
  3. Once rice is cooked, stir in apples and walnuts. Spoon chicken over bed of rice. Sprinkle with parsley, if desired.

Cooking Notes
TIP: To toast walnuts, heat skillet over medium heat. Add walnuts and shake skillet frequently until nuts are fragrant, about 5 minutes.
