- 1 box Near East Roasted Red Pepper and Basil quinoa
- 1 cup canned black beans
- 1 cup cooked shredded or diced Rotisserie chicken breast
- Diced avocado
- Salsa/diced tomatoes
- Chopped cilantro
- Shredded cheese
- Sour cream
- Lime juice
- Prepare quinoa according to instructions on box.
- When it is done, stir in black beans and chicken.
- Portion into bowls, and add toppings of choice.
