- 1 box Near East Rosemary and Olive oil quinoa
- 1/2 cup cherry tomatoes, cut in half
- 1 cup fresh spinach, roughly chopped
- 2 tablespoons fresh basil, chopped or 1 teaspoon dried
- 1/2 cup fresh mozzarella, cubed
- Olive oil, black pepper
- Prepare quinoa according to instructions on box.
- Let cool to slightly above room temp.
- Mix in tomatoes, spinach, basil, and mozzarella.
- Drizzle olive oil and sprinkle with black pepper before serving.
