Preparation Steps

  1. Prepare Near East rice according to package directions.
  2. Meanwhile, in a medium skillet, heat oil. Cook carrots, zucchini, squash, green onions and thyme for 5 to 8 minutes or until golden brown. Add chicken and cook for another 5 minutes.
  3. Stir vegetable/chicken mixture and lime juice into prepared rice.
