Chicken Rustica
When onions are carmelized they become tender and sweet. Carmelized onions are a topping for this dish, seasoned with treasured spices of the Mediterranean.

Ingredients

package (6.6 ounces) NEAR EAST Toasted Almond Pilaf Mix

ounces boneless, skinless chicken breast halves (about 3), cut into 1-inch pieces

medium red bell pepper, chopped

teaspoon ground cumin

teaspoon cayenne pepper

tablespoons margarine or butter

medium onions, thinly sliced

cups frozen peas, thawed
Preparation Steps
- In medium saucepan, prepare rice pilaf mix according to package directions, except stir in chicken, bell pepper, cumin and cayenne pepper when adding rice.
- Meanwhile, in large skillet, heat margarine over medium-low heat. Add onions, cook 15 to 20 minutes, stirring occasionally, or until onions are golden brown.
- Stir peas into cooked rice. Serve onions over rice.
