medium onion, minced

can (14 oz.) artichoke hearts, drained and cut into small pieces

to 2 tablespoons lemon juice

teaspoon dried basil

tablespoons Parmesan cheese, grated
Preparation Steps
- Prepare Near East rice according to package directions.
- Meanwhile, in medium skillet heat oil over medium heat, add onion and cook for 2 to 3 minutes or until tender. Stir in artichoke pieces and cook over low heat for 4 to 5 minutes longer. Remove from heat. Add lemon juice and basil.
- Stir artichoke mixture and Parmesan cheese into prepared rice.
