Greek Style Salad Wrap
A fresh combination of couscous with black beans, feta, basil and mint. Wrap warm in a tortilla or chill for a salad.

can (15 ounces) black beans, rinsed and drained

cup chopped tomato

cup crumbled feta cheese

cup chopped red onion

cup chopped fresh basil leaves

cups shredded lettuce
Preparation Steps
- Prepare couscous according to package directions. Transfer couscous to a large bowl; cool 10 minutes.
- In small bowl, combine olive oil, lemon juice and salt.
- Add beans, tomato, feta cheese, onion, basil and mint to couscous. Gently stir in olive oil mixture.

Variations
Wrap: Spoon 1 cup couscous mixture in center of tortilla. Add 1/2 cup lettuce; fold bottom and sides of tortilla up and around filling.
