Hummus Pilaf
We've combined the flavors of Middle Eastern Hummus - garlic, sesame seeds, chickpeas, lemon juice and cayenne pepper - with rice pilaf mix in a refreshing salad. A great accompaniment to grilled pork, chicken or lamb.

Ingredients

package (6.09 ounces) NEAR EAST Rice Pilaf Mix

can (15-1/2 ounces) chickpeas, rinsed and drained

cup chopped fresh parsley

tablespoons lemon juice

to 1/4 teaspoon cayenne pepper
Preparation Steps
- In medium saucepan, heat oil and sesame seeds over medium-high heat, 2 to 3 minutes or until seeds begin to brown, stirring constantly. Stir in garlic, cook 30 seconds.
- Add water, rice and contents of Spice Sack; bring just to a boil.
- Cover; reduce heat to low. Simmer 25 minutes.
- Stir in chickpeas, parsley, lemon juice and cayenne pepper. Cover; refrigerate at least 2 hours before serving.
