Glazed Chicken Kebabs

pound skinless, boneless chicken breasts, cut into 1-inch pieces

cloves garlic, minced

tablespoons prepared mango chutney or apricot preserves

each medium red, yellow and green bell pepper, cut into 1/2-inch pieces

package (6.09 ounce) NEAR EAST Rice Pilaf mix
Preparation Steps
- Toss chicken with 1 clove garlic, chutney and mustard. Thread onto 4 skewers; set aside.
- In medium saucepan, melt margarine over medium heat. Add onion, bell peppers and remaining 2 cloves of garlic. Cook 3 minutes, stirring occasionally.
- Stir in water, rice pilaf mix and contents of Spice Sack. Bring to a boil. Cover; reduce heat to low. Simmer 25 to 30 minutes or until most of water is absorbed.
- Meanwhile, grill or broil chicken kebabs 4 to 5 inches from heat 5 minutes per side or until chicken is no longer pink inside. Serve kebabs over rice pilaf mixture with additional chutney, if desired.
