Salsa Artichoke Chicken & Rice
A zesty Spanish-inspired mixture of long grain and wild rice, chicken, artichoke hearts, salsa and tomato. For added spice, serve with extra salsa.

package (6 ounces) NEAR EAST Long Grain and Wild Rice Pilaf Mix

ounces boneless, skinless chicken breast halves (about 3), cut into 1-inch pieces

package (9 ounces) frozen artichoke hearts, thawed and quartered

cup chunky medium salsa

medium tomato, chopped (about 1 cup)

cup shredded mozzarella cheese

Salsa (optional)

Chopped fresh cilantro (optional)
Preparation Steps
- Prepare rice pilaf mix according to package directions, except stir in chicken when adding rice. Cook 25 minutes.
- Stir in artichoke hearts, salsa and tomato. Cover; simmer 10 more minutes or until rice is tender.
- Sprinkle with cheese. Let stand, covered, 5 minutes or until cheese melts.
- Serve with salsa and chopped cilantro, if desired.
