Ingredients

slices bacon, diced

cup thinly sliced carrots

cup thinly sliced celery

cup chopped onion

garlic cloves, minced

quart (4 cups) chicken broth

can (14.5 oz.) diced tomatoes with basil, garlic and oregano

package (6.75 oz.) Near East Lentil Pilaf mix

tablespoons dry red wine (optional)

cup minced fresh parsley
Preparation Steps
- In 4-quart saucepan cook bacon over medium heat until browned and crispy. Remove and set aside.
- Drain off all but 2 tablespoons bacon drippings. Add carrots, celery, onion and garlic to pan. Reduce heat to low and cook until onion is softened, about 5 minutes, stirring occasionally. Add chicken broth, water, tomatoes and contents of Near East package including seasoning packet.
- Bring mixture to a boil. Reduce heat, cover pan and simmer 30 minutes. Stir in red wine, reserved bacon and parsley.
