Preparation Steps

  1. In 4-quart saucepan cook bacon over medium heat until browned and crispy. Remove and set aside.
  2. Drain off all but 2 tablespoons bacon drippings. Add carrots, celery, onion and garlic to pan. Reduce heat to low and cook until onion is softened, about 5 minutes, stirring occasionally. Add chicken broth, water, tomatoes and contents of Near East package including seasoning packet.
  3. Bring mixture to a boil. Reduce heat, cover pan and simmer 30 minutes. Stir in red wine, reserved bacon and parsley.
