Ingredients

package (6.75 oz.) NEAR EAST Lentil Pilaf Mix

cup frozen peas

teaspoon ground cumin

teaspoon red pepper flakes

medium onion, thinly sliced

lb. chicken breast, skinless, cut into 1-inch pieces, cooked

medium red bell pepper, chopped
Preparation Steps
- Prepare Near East rice according to package directions, except stir- in peas, cumin and red pepper flakes when adding spice sack.
- Meanwhile, in large skillet, heat margarine over medium-low heat. Add onions, cook 15 to 20 minutes, stirring occasionally, or until onions are caramelized or golden brown.
- Stir cooked chicken and red bell pepper into prepared rice. Serve onions over rice.
