Couscous Chicken Crunch
Inspired by Seattle’s Queen Anne Hill neighborhood, which from a distance looks like a layered masterpiece. The dish’s layers of pears, apples and romaine are reminiscent of the neighborhood’s unique and compelling stacked architecture and the steep hill they call home.

Ingredients

box NEAR EAST® Roasted Garlic & Olive Oil Couscous

oz. boneless skinless chicken breasts, chopped into 1½ inch “cubes”

tbs. virgin or extra virgin olive oil

Kosher salt to taste (suggested 1½ tsp.)

tbs. chopped fresh sage leaves

oz. apple juice

cup diced fresh apples

cup diced fresh pears

cup roughly chopped romaine lettuce
Preparation Steps
- Marinate the chicken breasts in olive oil, salt and sage for 5 minutes.
- Sauté the chicken over high heat in a large fry pan until golden brown and
cooked through.
- Remove chicken from pan and set aside; add the apple juice to the pan and
simmer in pan for 5 minutes.
- Add the apples, pears, couscous, and contents of Spice Sack and stir well
for 1 minute.
- Cover the pan and allow the couscous to bloom for 6 minutes.
- Fold in the chicken, additional salt to taste, and the romaine lettuce; fluff thecouscous with a fork before serving.
