Falafel is a tasty and highly nutritious vegetable patty mix made from ground garbanzo and fava beans and a special blend of spices. Serve with pita bread and cucumber yogurt sauce or as a meatless burger, on a bun with your favorite condiments.

Preparation Instructions

 
Preparation Directions
  1. Combine contents of falafel mix with 1-1/4 cups water. Let stand 10 minutes. (If mixture stands too long, patties will be difficult to form and break apart.)
  2. Quickly form falafel mixture into 12 patties, each 2 inches in diameter and 1/2-inch thick.
  3. In large 10-inch skillet, heat 1/3 cup olive oil or vegetable oil over medium heat 3 to 5 minutes.
  4. Cook patties about 4 minutes on each side, or until evenly golden brown and crisp.
Makes 12 patties
No Fry Directions
  1. Heat oven to 375°F. Lightly grease baking sheet with 1 teaspoon butter or olive oil, or lightly coat with non-stick cooking spray.
  2. Prepare mix and form patties as directed above in Steps 1 and 2.
  3. Place patties on baking sheet. Bake 15 to 20 minutes or until bottoms are golden brown; turn. Continue to bake 15 to 20 minutes or until evenly browned and crisp. (Fat reduced to 1.5g/serving, 20% calories from fat.)
Freeze and Reheat Directions
Falafel patties can be made ahead and frozen. To reheat, place 2 patties on microwaveable plate, loosely covered with plastic wrap. Microwave at HIGH 1 to 1-1/2 minutes.
