Caramelizing Onions

Caramelizing onions is cooking them so they brown deeply without burning, turning the sugars in the onion into caramel. Once you understand the concept, it is fairly simple to do and results in cooked onions with a mild, sweet, browned flavor. Caramelized onions can be used in a variety of recipes and on dishes from burgers to pizza.

First, heat the pan over medium heat and then add the oil, continuing to heat it. When you add the onions, the key is to have the oil hot enough to sizzle, but not so hot as to splatter. Once all the onions are coated with oil, the mixture will begin to cook more slowly. Stir frequently and keep at an even heat to keep any of the onions from scorching until the color is dark brown.

The Process of Caramelizing Onions

Step 1 - Add enough oil to coat the bottom of the pan over medium heat.

Step 2 - Stir onions to coat with oil.

Step 3 - Stir onions frequently until they are dark brown.
