Round Vegetable Technique

This technique can be used on any round vegetable, but onions have a good texture to start with. It is essential to use a sharp knife as you practice your chopping skills. First, slice the onion in half, through the root, to help hold the half intact while you chop. Don't forget to remove the papery outer layer.

Put the onion, cut-side down on the cutting board and make a series of parallel cuts with the end of the knife pointing toward the root end. Stop short of the root. Then, make a few vertical cuts through the body of the onion. Holding the onion down with a towel can offer some extra protection. Now, begin chopping across the onion, the opposite direction of your original cuts, moving toward the root. Perfectly diced onion will fall to the board as you cut.

Step 1 - Slice the onion in half and lay it flat on the cutting board.

Step 2 - Make a series of parallel cuts, stopping short of the root.

Step 3 - Start chopping the opposite direction.
